1/2 cup pineapple juice
1/2 cup pineapple pieces
1/2 cup cornflour
1 cup chicken stock
1 tsp Chinese salt
2 tsp sugar
2 capsicums, sliced
2-3 tbsp oil
250gms chicken, cubed
Salt and pepper to taste

Method:

• Marinate chicken with salt, pepper and Chinese salt.
• Heat oil in a pan, fry capsicums, remove and keep aside.
• In the same oil, fry chicken.

For sauce
Mix cornflour with one cup of water, add pineapple juice and sugar and boil. While boiling, mix chicken
stock and continue to boil till it becomes thick. In a bowl transfer the chicken and capsicum slices, add the sauce and garnish with pineapple pieces.
